Domaine de Combet - Elixir 2018
Elixir is just as its name a suggests, a real elixir! An exceptional Monbazillac organic sweet wine, composed of a blend of Sémillon and Muscadelle. The grapes are hand-harvested, with all of them being fully botrytised (noble rot) by the time they are harvested. This reduces the water content in the grapes and concentrates the delicate flavours. Elixir then undergoes a full 30 months of aging in French oak barrels.
On the nose it offers a heady mix of yellow fruits and quince, which develops to candied pineapple and dessicated coconut following aeration. On the palate the candied fruits continue, with honey, beeswax and a spectacular fullness complemented with some acidity to ensure it's not sickly. The finish is lengthy with a beautiful flavour of candied pineapple.
Elixir pairs well with rich foods like foie gras or even blue cheese (fourme d'Ambert, bleu de Bresse), and it also makes for a brilliant digestif at the end of a meal.
Contains a small amount of sulphites added at bottling.
